chime in on this. I read that McQueen wanted to give the car more of a stealth appearance which is why they made these changes and others like painting the chrome rocker strips body color.

In photos of one of the original 1:1 cars it looks like the rocker strip paint either wore off or was removed. Another possibility is that not all of the Mustangs used in the film had the exact same appearance modifications.
